*4 flour tortilla
*3-4 boneless skinless chicken breasts
*Seasonings (I used paprika, cayenne pepper, white pepper, salt, powdered garlic, powdered onions, cumin, sugar, cornstarch, chili powder)
*1/4 cup of water
*1/2 medium size white onion, sliced
*1 tbs olive oil
*Cheese (a mix of sharp cheddar, Colby, and Monterey Jack). Amount? Well…. according to how “cheesy” you like your Quesadillas 😉
*In a large saucepan, heat olive oil on medium heat. Add chicken and cook till no longer pink
*Add seasonings and water. Mix well until aromatic.
*Add onions and cook uncovered until onions are soft and tender.
*Arrange the tortilla on a waxed oven paper. Spread the chicken mix, top with cheese and fold. Place in the oven on 100C and flip over when cheese is melted.
*Cut into triangles
Serve with salsa, guacamole, and sour cream (Does anyone need the recipe for salsa and/or guacamole?? Please let me know)
