Beef Stew With Fresh Veggies

Beef Stew with Fresh Veggies! Take out the beef if you are vegetarian. I added Uncle Ben’s wild rice too 😉

Beef Stew with Fresh Veggies + Wild Rice

Ingredients

Fresh Veggies

  • 2 zucchinis, cut into rounds
  • Around 8 brown mushrooms, cut into halves
  • 5 red potatoes (with skin), cubed
  • Handful asparagus
  • Handfull of shallots
  • 2 cans tomato sauce (15 ounces each)

Tomato Sauce

  • Seasonings: I used sea-salt & 5 pepper blended mix + steak seasoning + powdered garlic

Seasonings

  • 400-600 gm beef, cut into cubes
  • 1/2 onion, chopped

Method

  • In a saucepan, semi-cook the beef with spices, onions, and then add one can of tomato sauce

Cooking Beef

  • Place the meat mixture into an oven safe dish (pyrex). Top it with the veggies and add the other can of tomatoes sauce

Veggies On Top Of Beef

  • Cover in aluminum foil and punch in some holes

Punch Holes

  • Cook in the oven for about 1 hr 30 mins -med/high heat- or until meat and veggies are fully cooked 😉

    • Its Uncle Ben’s and it can be ready in a couple of minutes. I got it from Sultan Center. Now my spices are from everywhere… I buy them from Sultan, Coops, Dean & Deluca, or when I travel abroad 🙂
